Spaghetti alla puttanesca

Serves 2 to 3 people
Recommended: Spaghetti or Linguine

Instructions

1. Bring water to a boil, add a pinch of sea salt, and a teaspoon of olive oil.
2. Take 200 grams of pasta (Spaghetti or Linguine) and add it to the boiling water.
3. Cook the pasta for roughly 11 minutes (or as per manufacturers instruction), the consistency of pasta should be al dente (meaning it should have a bite to it and not mushy).
4. In the meantime, while your pasta cooks. Puree a can of peeled tomatoes and measure 200 grams [1 cup].
5. In a sauce pan, add a tablespoon of olive oil and pour in the puree of tomatoes. Let it simmer on medium heat, till the tomatoes starts splattering. 
6. Add 3 tablespoon of Puttanesca seasoning to the sauce and simmer on low heat for 1 minute.
7. Drain the pasta once cooked, while reserving some of the pasta water.
8. Toss the pasta, seasoned sauce along with some pasta water for a minute or so.9. Optional - grate some Parmesan or cheddar cheese on top and serve.
